Dark Chocolate and Coconut Popsicles

  • Prep Time: 5 minutes (+ 5 hours freezing)
  • Cook Time: 5 minutes
  • Servings: 6 popsicles

These dark chocolate-dipped popsicles are just the thing to satisfy your summer sweet tooth.

Popsicles are delicious, but popsicles dipped in dark chocolate, coconut and nuts – even better! They’re perfect for hot summer nights and afternoons spent poolside with friends.

For some extra fun, make them ahead of time and let your guests dip them in the chocolate. Or try mixing things up by offering different popsicle flavours – these mint chocolate pops are another summer favourite.

  1. Put all ingredients into a blender and blend until combined. Divide the mixture evenly between 6 popsicle moulds. Freeze for at least 5 hours, or until set.

  1. To melt the chocolate, place the finely chopped bar into a heat-safe bowl and set over a saucepan of barely simmering water for 5 minutes or until it can be stirred and melted. Don’t let the water touch the bowl while the chocolate is melting. Set aside.
  2. Mix together the chopped nuts and coconut flakes and scatter onto a flat plate.
  3. Remove the popsicles from their moulds and dip the ends in melted chocolate. Quickly roll the popsicles in chopped nuts and coconut flakes. Serve immediately.

Substitution: For even more coconut flavour, substitute in Lindt Excellence Coconut Dark Chocolate.
